Healthy Chocolate Chip Scones

Scones are one of my favourite foods so I was so happy when I made these grain free scones. I added dark chocolate chips as I just love chocolate in everything, but this can be substituted for blueberries or anything you want. They taste like real scones only better, and you know that they’re good for you so it’s guilt free. I hope you enjoy them as much as I did so here’s the recipe. 🙂

Makes approx 9 scones

Ingredients:

1 3/4 cup of Almond Flour

3 tbsp of Coconut Flour

4 tbsp of Honey

1 egg

4 tbsp of Almond Milk (or any other milk)

3 tbsp melted Coconut Oil

1/2 tsp baking powder

1/4 tsp salt

1/2 cup of Dark Chocolate Chips

Method:

1. Preheat oven to 180C.

2. Grab a large mixing bowl and add the almond and coconut flour, honey, egg, melted coconut oil, baking powder, salt and 3 tbsp of almond milk.

3. Mix until a loose dough forms then fold in the chocolate chips.

4. Line a baking tray with baking paper, take a heaped tablespoon of mixture and place on the baking tray, shaping it to look like a scone. Continue until there is no mixture left. (You can make the scones as big or as small as you want)

5. Once all scones are shaped use the remaining tablespoon of almond milk and brush over the scones for a glaze.

6. Place in the oven for 15 to 20 minutes or until golden brown.

Healthy Chocolate Banana Oatmeal

Oatmeal is my favourite meal to have for breakfast and I have it almost every morning, but sometimes I like to mix it up. This morning I decided to add a teaspoon of cacao powder before I cooked it and oh my god it tasted so good! I also added banana for some sweetness and they went so well together. Here’s the recipe 🙂

Ingredients:
3/4 cup of raw oats
1/2 medium banana
1 tsp of cacao powder
1 tsp of stevia
Water

Method:
1. Measure out 3/4 cup of oatmeal and pour into a bowl.
2. Fill up with water until there is a small layer of water over the oats.
3. Add the cacao powder and mix together.
4. Put in the microwave for 2 minutes or until cooked.
5. Take it out of the microwave and mix in the stevia.
6. Chop the banana into coin sized pieces and layer over the top of the oatmeal.
Enjoy!

Healthy Hot Chocolate

Hot chocolate is one of my favourite things so I was so happy when I first made this. It tastes like regular hot chocolate and has a delicious rich chocolate flavour while still being good for you! Cacao is rich in antioxidants containing 30x more than blueberries and is an excellent source of iron and magnesium. Here’s the recipe 🙂

Ingredients

1 heaping tsp of raw cacao powder

1 cup of almond milk

1 tsp of stevia

Method

1. Pour almond milk into your cup and put in the microwave for about 1 minute, or until desired temperature.

2. Take the cup out of the microwave once desired temperature is reached and put in the cacao powder, mixing until it completely dissolves. (More cacao powder can be added for a richer taste)

3. Add the stevia and mix until completely dissolve. (More stevia can be added for sweetness if desired)

Quinoa, vegetable, nut and seed salad with creamy cashew sauce

I went to a cafe for lunch today called the Bare Bones Society and had this delicious Quinoa salad. It was so tasty and I can say it was the best salad I’ve ever tasted. It had quinoa, vegetables, potato, nuts and seeds and a creamy cashew sauce and these ingredients went so well together. I just thought I’d share this to give people some inspiration for making salads and it seems pretty simple to make so I’ll have a list of the ingredients included in this recipe below 🙂

Ingredients:

Quinoa, roasted vegetables, cabbage, roasted potato, nuts and seeds and a creamy cashew sauce.

Healthy Lemonade Ice Block

So I made these ice blocks today and they turned out to be delicious! The lemon flavour makes it so refreshing and perfect for a summer’s day. With only a few ingredients they are so simple to make and they freeze in only a few hours. Here’s the recipe 🙂

Note: for this recipe you will need ice block containers. Below is a picture of different kinds, mine is very similar to the one on the top right but any will work for this recipe.

Ingredients:

2 lemons

water

frozen berries

2 tsp Stevia (optional to make it sweeter)

Method:

1. Grab a large mixing bowl or jar to hold the liquid and pour about 5 cups of water into it.

2. Squeeze the juice of 2 lemons into the water, add the stevia and mix together.

3. Grab the ice block container and pour the liquid into one compartment, leaving room at the top so it doesn’t overflow when the berries are added.

4. Add a few berries into the same compartment and put the ice block handle over the compartment.

5. Continue this until all of the compartments are filled.

6. Wait a few hours or until they’re frozen and enjoy!

Tasty Snack

I thought I’d share these fabulous spreads with you as they are healthy and are so delicious. They are a great substitute for spreads such as Nutella or peanut butters packed with other hidden ingredients. My favourite is the peanut cacao spread which only contain the ingredients cacao and peanut and is perfect to use on toast or with fruits and vegetables.

A healthy snack that I love to eat is a cut up apple with the paste as it tastes amazing and adds another element to the snack. It is so filling so you won’t feel like eating anymore and is so delicious.

Chocolate Chip Cookie Cakes

I would call these chocolate chip cookie cakes “cookies” but they are just too fluffy and light to be called that. These are so delicious and filling so you won’t be tempted to eat the whole lot! They are guilt free, sugar free and are so tasty so I hope you enjoy them as much as I did 🙂

Makes approx. ten cookies

Ingredients:

1 1/4 cups of Almond Flour

2 heaped tbsp of nut butter (I used peanut)

1 ripe banana

1 tsp Cinnamon

1 tbsp honey

Sprinkle of salt

1 tsp Baking Soda

1/4 cup dark chocolate chips

Method:

1. Preheat oven to 180C

2. Put the banana, nut butter, cinnamon, honey, salt and baking soda into a large mixing bowl and use a hand mixer to blend.

3. Once that has blended pour in the almond flour and chocolate chips and stir with a spoon until all the ingredients are mixed together.

4. Grab a baking tray and line with baking paper, then take tablespoon amounts of the mixture onto the tray and shape.

5. Leave to cool and enjoy!

Healthy Ice Cream

This tasty Ice Cream recipe is not only healthy but so simple to make, only containing two ingredients. This frozen treat is perfect for summer or any occasion and is so delicious and creamy, best of all it can be enjoyed guilt free!

Serves 2 people

Ingredients:

Just two ripe bananas and one cup of frozen raspberries!

Method:

1. Chop up the ripe bananas into small pieces and leave to freeze overnight.

2. When the bananas are frozen, place into a blender along with the raspberries and mix until there is a creamy consistency.

3. Scoop the ice cream out of the blender, top with some frozen raspberries and enjoy!

Chocolate Chip Cookies

If you’re like me and love your sweets but are trying to stick to your healthy eating, then these mouth watering cookies are perfect for you. Packed with nutritious ingredients these delicious cookies are a guilt free treat for any occassion. I hope you enjoy these yummy cookies as much as I did so here is the recipe. 🙂

 Preparation time: 15 minutes

Cooking time: 20-25 minutes

Makes 12-14 cookies

Ingredients:

2 cups of Grounds Almonds

2 heaped tbsp Coconut Oil

1/2 ripe mashed banana

1/2 cup carob chips or dairy free chocolate

1 tbsp honey or preferred natural sweetener

1 tbsp nut butter (almond or peanut)

1 tsp cinnamon

1/2 tsp nutmeg and salt

1/2 tsp baking powder

Method:

1. Preheat oven to 170C.

2. Mash the banana in a separate bowl until smooth and leave to the side.

3. Heat the coconut oil in a saucepan until melted, then add the honey, cinnamon, nutmeg and salt and mix together. (Keep on a low heat and make sure it doesn’t boil)

4. Leave the saucepan and in a mixing bowl mix the ground almonds, banana, chocolate chips and baking powder together.

5. Add the sauce from the saucepan into the mixture and mix until it creates a dough consistency.

6. Line a baking tray with baking paper, place a tablespoon amount of mixture onto the tray and shape into a cookie. Continue until there is no mixture left.

7. Place in the oven and cook for 20-25 minutes or until golden.

8. Leave to cool and enjoy. 🙂
